I was wondering if it's possible to bundle the JRE with a CFEverywhere
app. I know that license-wise this wouldn't be possible, but this is
just for a demo CD that's only going to be used by our salesman. This
way, he'd be good on any Windows PC he used. I've tried copying the
bin and lib directories from a JRE installation and setting JAVA_HOME
to the java folder in the CFE app, bit it still tells me that it can't
locate a java installation.

I'm sure it's possible but I haven't actually done it so I can't give you details.  I would do a full install of the JRE in your project folder and then just make sure your app always uses relative file paths.  How are you specifying JAVA_HOME?
