I'm not currently a Mac user but over at https://deals.cultofmac.com/ they sometimes have goodoffers on hardware and software that may be of use, including some freebies. They're not focussed on education obviously but you might pick up something useful from time to time. It's worth keeping an eye on anyway.

You can use QuickTime to record the screen (great for tutorials) free
Use Reflector(about 8€) to mirror ios devices to the mac screen, use QuickTime then as above, or for presenting in class.
