I am interested in purchasing this product for creation of order forms
using MS Publisher.

I have a form and it has the following type of structure:

Product A: 100USD Admin Fee | 50USD Proctor Fee | Quantity
______________ = Subtotal [Calculated Field]
Product B: 100USD Admin Fee | 50USD Proctor Fee | Quantity
______________ = Subtotal [Calculated Field]
Product C: 100USD Admin Fee | 50USD Proctor Fee | Quantity
______________ = Subtotal [Calculated Field]
Subtotal of A+B+C= Calculated Field [Calculated Field]

I am not familiar with Javascript but can learn - my firm has about
twenty subtotal groupings as above that will need to all be totaled
together.

Can anyone give a clear explanation of how I can achieve this as we
use this methodology frequently on our forms.

Thanks for asking. This form should be easy to do. We have an example similar to what you want. Not sure if you have looked at it yet. It was done in Word, but Publisher follows the same idea:

Thanks for the purchase. Basically you will need two pieces of knowledges to master the programming in PDF.
 
The first one is the Javascript as general, such as it syntax and build-in functions, etc. You can learn it from books or online.
I usually use this web site as reference:
 
 
The second part is the Javascript features that supported by Adobe. All materials are listed on Adobe web site: http://www.adobe.com/devnet/acrobat/javascript.html
but I only use this document:
 
It listed all objects that you can use in your PDF. Mostly you will only use the Field object and sometimes event object.
 
If you have any programming experience before, it would be easy for you to pick it up. Let me know if you have more questions.

Maybe my question is more javascript related then ...

Can you give me some basic pointers on coding such calculated fields?  I have just purchased a license and I am committing to using your software to migrate our forms this weekend.

I would appreciate as many overview pointers or resources you could point me to.
