Easter is around the corner so we need to plan for the breakfast.
Here is a list that Amy had. Let's start getting volunteers to bring
stuff in. As always, I will do the eggs. I do not have quantities
for all these, but we can estimate. If people from last year
remember, it would be great if we could fill in the blanks.
These were numbers for about 100 people. We probably served more than
that, so we might want to up the numbers to 8 boxes and 250 sausages.
People can split up sausage duty, or....we can work something out when
we count up donation money since sausages can get expensive.

Table decorations

whisks for stirring eggs, large bowls for mixing
pancakes, everyone bring their own hat & apron (must
be worn in the kitchen!)

We've always used pre-mixed in the past, to save time primarily. If we use frozen, we'll need pitchers to mix in and time to chill the newly mixed juice. Of course, the pre-mixed takes up a lot of space in the refrigerator though! You could bring it to the church a day or two ahead and leave it downstairs in the kitchen. The front door staff have always been willing to let us in the kitchen to drop things off if we ask.
I'll look up how much OJ we used in the past...can't remember off hand but I think I have it written down from last year. You can always bring half and let someone else bring half too!

The problem is the play setup. I talked with Phil about it, and he was of
the opinion that it would be too much of a hassle. I don't think it will be
terribly difficult to do it. We'll have runners to take the food up in
those metal foil pans.

That's lot of runnin' (lol). From a risk manager perspective, I hope that it does not rain on Easter for slip/falls on the stairs and elevators, if needed. Who do I talk to about the church's insurance for review of coverages?
I am not trying to be negative, just safe. Due to the bad economy right now, lawsuits are more and more rampant.

Do you think it would be better to use the classrooms instead of James Parlor? We have such a hard time keeping food out and warm when the kitchen is right there. I can't imagine trying to run the food up two floors and keep it warm (which could be a health issue, too). Perhaps we should change the breakfast menu from hot food to more of a continental breakfast? That would be one option that would let us serve food that tastes good and will be safe. Is there really no way to get Pierce Hall? What kind of a hassle is Phil talking about?

Hi, everyone! I can probably help as a runner, cook or server for a while between services. I don't have Kids' Music on Easter, so I can work from the end of the first service until whenever the choir has to get back for the second service, probably 10:30 or 10:40. I miss being in class and would like to help out if you need something, within my availability.
What do others think about changing the menu if we must serve upstairs? I know the pancakes, eggs & sausage menu is tradition, but it will be very difficult to serve that food warm if we must take it up two floors after cooking - not to mention keeping it stocked during the rush, which is difficult enough when the food is being cooked right behind us! Does anyone know if the church owns warmers to hold the food at an appropriate temperature upstairs? I'm not aware of any, but maybe we do have some.
I would suggest, if we are going to serve upstairs, that we consider a menu of baked goods and fruit - things that do not have to be kept warm/cold to taste good and be safely served. We could do a variety of fruit trays & fruit salads - berries, melons, apples, grapes, bananas - maybe with some yogurt dips to go with them (very easy to prep - mix yogurt & cool whip or cream cheese). We could bake or buy a variety of breads, muffins, donuts & danishes to go with it. Other ideas? I'm sure there are more things we could add that I'm not thinking of right now.
If others agree that this is a better route to go, Rob & I would be happy to host a "baking day" next Saturday to prepare for Easter morning. We only have one oven here, but there are two more available in our building's "party room" that I'm pretty sure we could use. It might be fun to get together and bake rather than all doing it on our own. I have good recipes for zucchini bread, banana bread and raisin bran muffins. I know Kwang bakes breads. Maybe someone knows some mini quiche recipes that could work?
I supposed we could also try to cook upstairs again like we did a few years ago during the remodeling of the kitchen. I remember that being difficult though - we had trouble getting enough current flowing to power the griddles, etc.

Phil didn't think it would be worth the hassle of breaking down a "complex"
set and set up tables. He also thought James Parlor would be more inviting
than in the basement. I think the classrooms will workout fine....with some
creative table placement. And if we need an overflow, we can put people by
the elevators. Let's check the spacing this Sunday.

Being a traditionalist, I would vote to keep a hot breakfast. However, I am
also not going to be there.
If Kwang is saying that we can use the classrooms in the basement, I think
we should. Breakfast served in classrooms in a basement has a very
authentic churchy feel to it.

To you have a count on what people have already volunteered to bring? Also,
if we are serving a hot breakfast then the cooking would be done in the
basement even if served in James Parlor, correct? This means no need to

Hot breakfast served in the basement classrooms works for me. My concern is with trying to transport hot food from the kitchen downstairs up two floors to serve it upstairs - while keeping it warm and trying to maneuver through the crowds with hot pans. If the classrooms are available and we can squeeze in that space, let's do it.
Although...I do really like the crepe idea! But it sounds like the traditional menu is preferred by most people, so we'll stick with it.
We will need the griddles, even in the kitchen, because there is only one stove top and it is too small to do pancakes, sausage and eggs all at once. We usually use griddles for the pancakes and do eggs & sausage on the stove. So if you can bring this weekend/week that would be great!
As for the menu...I haven't been carefully keeping track, but I'll go back through the emails and see if I can compile a list. I think we had some overlap, so we may need to sort that out.

Ask the security guards to let you into the kitchen - they are usually willing to do so. Leave a note on everything saying "CAFE Easter Breakfast" so that it is not used for something else!

How are we doing on the other identified needs (coffee, etc.)? I can pitch
in a roll of foil and a pound each of regular and decaf coffee if still
needed.
