Quinoa for snacktime anyone?

Was searching around to see how I could make Quinoa more appealing and stumbled across this... looks so delicious I'm going to try it as a snack time alternative and thought you guys might like: http://www.includingcake.com/2013/04/creamy-quinoa-porridge.html

Anyone have any yummy ways to prepare as a simple dinner side (what I really need)?

Hope the park was fun today!  Sad I missed but had my last day of Tribeca FF tickets.  Movies were amazing.... worth the childcare wrangling this week to catch a few.

Looks tasty!  As for others options, I sometimes just roast various veggies - green beans, carrots, etc.  (These often end up being the bulk of a meal for us).  As Eve's gotten picker, I find that veggies she'll no longer eat steamed are totally cool when roasted.  I tend to do a bunch at once, and then just have them ready to go in the fridge.  

Indeed - hope you all had fun!  Eve and I both ended up getting annoying colds... makes me all the more ready for consistently warmer weather.
