Greetings from Norway!
This is my first posting on behalf of my celiac wife.
We are looking for a replacement for couscous.
Couscous is a North African dish based on wheat semolina. In fact the
same type of flour as used in spagetti but coarse grounded and looking
like a rice dish of very very fine corn.
Most of the taste of the dish is of course in the vegetables and spices
used together but using rice as a replacement just doesn't taste right.
Any suggestions?

Personally, I find that millet works pretty well as a
substitute. (I realize that not all celiacs condone eating
millet, so I leave this one up to you.) Some recipes also
work okay with a brown rice base, it sort of depends on the
flavors of the recipe.
