Noah's has filed for bankruptcy. Most of the stores will continue to
operate - for a while. If they don't suddenly discover customer service
they won't be around for long. I won't morn their demise, only their
potential.

Ah, I found the bankruptcy information on Yahoo. I suspect they will
restructure and some stores will survive. Of course the poor stockholders
lost everything. Kind of Boston Chicken Planet Hollywood, all over again.

Wow, I'm kind of surprised that they filed for bankruptcy, given the fact
that there always seem to be lines of people there. For the curious, here

I guess you need to sell a _LOT_ of bagels to pay for the retail space
at the locations they choose. Apparently it was real estate related costs
that did them in.
I used to go to a Noah's near my daughters old pre-school in downtown
San Mateo fairly often but I stopped because the service was so abysmal that
it
was taking forever to get served and I was on the way to work and couldn't
waste that much time. They couldn't understand simple requests and often got
the order wrong. Even though I got the same thing every time I went there,
the
price varied by lunar tides. When Costco started to sell real bagels that
was the
end of Noah's for me. Their bagels were no better than 'Everybody's
Bagels' (or whoever it was) or the Costco bakery bagels (which are only
sporadically available).
I used to drive to Santa Cruz to the Bagelry for bagels and I guess I'll
start
doing that again when I get the craving. Much better than Noah's, Bagel
Works, or House of Bagels. The Bagelry in San Francisco (is it still
open on Polk?) is also good.

Well I wasn't joking, but it is entirely possible I'm mistaken. I don't
*usually* misremember soemthing like that, but since I couldn't find
anything to confirm my recollection I'mn no longer certain of my
statement.

from ours (wonder what my Jewish ancestors in Nebraska and Texas
ate?). When I was a teenager, I made bagels a couple of times,
using different recipes. One had you boil the bagels first, then
bake. The other reversed the process.

Well, the canonical order is boil, then bake and that is the
order in which the process occurs in both the orthodox and
unorthodox bagel bakeries in Montreal. The denizens of either
type of place wouldn't agree on much else but on that point they
would be unanimous.

I can't feel particularly sorry. Noah Alper created a nice little bagel
company. He seemed to treat his employees fairly well. At the time he
started, people stuck with him, unlike the employees of lots of these fast
food places. Then, he decided to sell the company and become a rabbi.
The buyers seemed determined to McDonaldize the place. Morale plummeted,
staff turnover rose so high I remember going into one store and seeing new
employees every few *days*. In short, the Einstein company ruined Noah's.
