Vietnamese Stuffed Intestines

For quite a while now, I've been trying to figure out what those brown
turd-looking things are that they sell at the vietnamese sandwich shop
on Fourth Street in San Jose (between Santa Clara and San Fernando).
They sometimes don't have them, but I was in San Jose last week
and noticed they were piled pretty high.

They are stuffed intestines of some sort, not just sausage casings,
but the whole intestine I figure. They are mild in taste, and the
insides look like, well, partially digested food. Last time I
bought some, another parton (vietnamese) looked at me kind of weird
and snickered, mumbling something incomprehensible. They come on
the styrofoam plates wrapped in plastic wrap, and usually sit
next to the prepared rice/noodle plates.

I'm perfectly willing to accept the fact that these are "naturally
stuffed intestines", I just need to know. I've never asked any of the
staff there since we always seem to have a communication barrier if you
ask for anything other than a sandwich. I usually end up pointing
to things under the heat lamps, not knowing what they are either (or
at least what they call them), but those items are much less
difficult to figure out than the stuffed entrials.

Can anybody fill me in on what these are? How they are made, and
what exactly are inside of them? I can handle it. I'm prepared
for the worst.
