Re Scottish maps, try
www.maps.nls.uk  Go to Digital Sources, then maps of Scotland. There are town plans as well.
The National Library of Scotland has a wide range of digitised maps, free to view and download from the earliest maps in the 16thC onwards.

I love the Timothy Pont maps, from the 1580s - amazing detail, wee cottages, castles, etc..!
