Does anybody know the best way to tell Jenkins to delete old builds
(up to, say the most recent 5 or so)? And then furthermore, what's
the best way to limit how many builds it should keep for each project?

I ask because my Windows build machine is already pretty much out of
disk space and things went haywire as a result.

I don't know if it's part of standard Jenkins or a plug-in
ShiningPanda has, but they have a "Discard Old Builds" checkmark on
the configuration page that allows old builds to be discarded by
number of days old or by a max number of builds.

I see, that must be a plugin then, since I can't find anything like that.

I'll see if I get it installed--does anybody care if I limit the
Windows builds to keep 5 builds per job?
