Do you mean what they call blood pudding around here?? There are two
slaughter houses here that still make blood pudding and head cheese.
The head cheese has rolled oats in it and the German decendents call
it grits. I had never heard of Hominy Grits till I was in my teens.

What I'm referring to comes in a casing the size of summer sausage. It
is sliced and fried. It is not "chunky" in texture. It is dark red in
color.
