If Young were having an affair on the Destiny, would the news spread to
the rest of the crew? When Young was having an affair at an Earth base,
did the news spread all over that base? How effective are rumor mills
at spreading salacious news all over a military base?

I think the spread of an affair on Earth is always going to be
different then on the Destiny simply because on Earth people can
leave and have lives away from the base. On Destiny there is really
nothing else to do and nowhere else to go. In order to keep an
affair quiet on Destiny would take a lot of hard work. Rumor
mills, imo, are great at spreading news. Whether that news is accurate
is not always important. I would expect that rumors on Destiny would
be easily spread and no more likely to be accurate.

OTOH, I don't know how much the people on Destiny care about affairs
right now. They might be very focused on figuring out how to not go
nuts from boredom, figuring out how to work the ship, figuring out
how they are going to survive never returning home, etc. Who is
bonking whom might be low on the list.

I would have thought that the people on Destiny would be more hungry for
gossip. As you say, they would be focused on getting home, but they would
need to unwind, let off steam, be "normal" for a bit, other wise they really
would go nuts. Gossip goes some way to doing that. But equally, I would have
thought that would also mean loads of them would be "at it", for the same
reason.

If Emily were to visit the Destiny, and not hear any rumors of Everett Young
having any affairs, could that convince her of her husband's sincerity?

My wild guess would be that it would make little difference to what ever she
currently believes.

IIRC, he has a history and none of the crew know her well enough to tell her
or to be loose tongued around her. When things have happened before,
suspicion always lurks. That's why betraying trust can never be fully
repaired.
