In the meantime, I know this can be a hard time of year for many, so I
want to say I hope everyone keeps themselves safe however is best for
them to do so. If there's any enjoyment that can be found, I hope you

thank you. i know you will enjoy visiting with your niece. hope the
rest is reasonable. nice to have a week to curl up and catch your
breath. don't eat meat but have to say, turkey was never something my
mouth ever enjoyed. the only thing i miss is bacon, pork chops and
ham. i know, i know, the worst of the worst. but hmmm, the mouth still
drops hints. ;-)

Thanks, betsy. I recently subscribed to a weekly box of organic produce
delivered to my house (what a treat!), like a CSA, only you don't have
to go pick it up and the produce isn't just local (jolly good since
nothing's growing in New England right now). I'm getting veggies I've
never had before, so I'm learning to cook them. I cooked some amazing
collard greens this past week. I knew I needed to cook them with pork,
so I got some country style (?) ribs (the ones with lots of meat on the
bones), cut off the fatty stuff for the greens and cooked the lean up
for carnitas for burritos. I browned the fatty bits then packed in
collard greens that I'd washed and cut up kind of big. I let the greens
steam over the pork, then stirred it up and let it cook a little longer.
Oh, MAN was that good! So I got some fat back for the next lot. I know
it should be smoked hocks or something, but smoked meats sometimes give
me migraines.
Sorry for the carnivore p*rn! You just reminded me, and I thought I'd
share an experience I enjoyed.

Ham is one of our favourite kinds of meat, and bacon too :P We're
hungry. But eating lately has just made us sick :/
*amused sigh* I guess I should educate you then *grin* Collard
greens with beets are awesome! As are collard greens steamed with
salt/pepper and a trace of vinegar. And baby collard greens mixed in
a salad are good too. And creamed collard greens (just like creamed
spinach). Hmm, collard greens and tempeh I bet would be fantastic...

I second that emotion! ;-)
Something helpful I recently learned: You can always start over. That
gives me comfort when I mess up on my eating or exercizing or taking my
meds or keeping up with house stuff. It's not the end if I mess up. I
can always start over.
