I found something on the net called "The Chile Grill" (take a look:) http://www.irondesert.com/chilegrill.html which you can use to set the jalapenos in to bake them. It looks like a handy little gadget, but unfortunately it isn't available in Georgia and I need it like, quick. This thing looks like a metal egg carton with just holes to set the peppers in. What can I use in it's place? A Muffin pan maybe?

A mini muffin tin with rings of tin foil in the bases of the cups should do the trick.
This has to be one of the cutest cooking accessories I've seen in a while. Thanks for posting that, Quasi. It's going on the xmas wish list.

Thanks to everyone for your suggestions. I'll try to make some aluminum foil cuppies and see how that works. Looks like it'll be shrimp with cream cheese and a strip of bacon on top as the filling.

Tony Chachare's Cajun seasoning (or any other cajun seasoning), and some minced garlic.

My favorite stuffed Jalapenos are very simple. Cut the tops off the chiles, core them with a grapefruit knife, then roast on a grill until slightly charred on all sides.
Make a mix of 1 part mashed roasted garlic to 2 parts goat cheese.
Put the mix in a ziplock bag, squeeze out all the air and seal, then clip a corner off the bag so you have a piping bag. Use this to inject the cheese garlic mix into the freshly roasted chillies.
I usually do about 20 jalapenos and 1 habenero in a batch. I save the habenero til the last :-)

This appetizer that my in-laws love sounds like it's right up your alley, Quasi.
Atomic Buffalo Turds
Mix some chopped cooked beef brisket with cream cheese. My MIL uses about a half cup of chopped meat for an 8-ounce package of cream cheese.
Cut the jalepenos in half, remove the seeds and veins. Stuff each half with the cream cheese mixture.
Place halves together and wrap with a slice of bacon. Skewer it with a toothpick through the middle to hold it together.
Grill on the BBQ until the bacon browns. (I'm sure they could also be put in the oven until the bacon browns.)

I asked the same question over in rec.foods.cooking and some moron accused me of shilling for the company that makes this grill because I didn't order the one they offered for Christmas direct from them. Well, I *will*, but there's time constraints because Halloween is next week, and I don't feel like paying next day UPS or Fed-EX.
