Why would pagans celebrate the death of a christian saint? The day is for
irish catholics.

Catholics don't celebrate his death, they celebrate his
sainthood on the day of his death. Pagans celebrate
his death, since he was a scourge to pagans when he
was alive. But actually I retract that since it is
not good to celebrate anybody's death.
