Bobbie - Who is finding stews, casseroles and shepherds pie good filling
and warming meals for this time. Convenient too.
It means I can make enough for 2 families and it does save my darling
daughter from having to faff about after work.
I find if I make individual hot pot and cover it in pastry the girls
love it.
I had enough stuffing left over after filling all the cabbage leaves that
I'll use it to stuff green peppers later on. As it is, we'll have enough
stuffed cabbage for four more meals. I doubt I'll ever get the hang of
cooking one such meal for two people.
Already done.

Question: How many here eat leftovers every day until they're all gone?
Sweet Wife won't allow it. I'm forced to freeze meal-sized portions for
future eating.
Not in the beef or lamb stew I make for John but certainly I use a
chilli powder in this one.
Spicy Chickpea and Vegetable Stew
Ingredients
Makes about 4-6 servings
3 tbsps olive oil (you can use less if you prefer),
1 aubergine (chopped into cubes),
2 medium carrots (sliced),
2 red peppers (chopped into large chunks),
2 med.potatoes (cubed),
1 large can tomatoes,
1 handful of french beans,
200g cooked chick peas,
about 1 cup of stock,
2 tbsp tomato puree,
2 cloves of garlic (sliced),
2 tsp curry powder,
1tsp cumin,
1 tsp coriander (ground seeds)
2 tsps black sesame seeds.
1/2 - 1 tsp chilli powder
Method
1.Heat the 2 tbsps of oil in a large frying pan and fry the aubergine
cubes till browned. Remove from the pan.
2. Add the other tbsp of oil to the pan and fry the peppers for a few
minutes till lightly browned.
3.Add the garlic and fry for 2-3 minutes.
4.Return the aubergines to the pan with all the other vegetables (not
the tomatoes or puree though) and add the spices to the mixture, gently
frying it for about 3-4 minutes.
5.Now add the tomato puree, tinned tomatoes (or fresh when available),
stock and the chick peas.
Season with salt and pepper.
6.Pop a lid on it and let it cook gently on the stove for about 40 mins,
stirring frequently. Alternatively, pop it in the oven at 180�c for
about 60-70 mins.
I make enough for 4 servings and freeze what we don't eat.
You can serve this with bread, rice or couscous or just eat it on its
own as a thick soup. Tastes even better the next day :)
I also put dumplings in this too. Just because I and most of the family
are very fond of dumplings.

That's great! Ground turkey seems to substitute well. My son loves tacos.
He started with beef, but he has been making has tacos with ground turkey
for years.

Well I never. We don't usually have left overs of meals. I won't let
anyone leave the table until they have emptied their plates. Greens and all.
Perhaps I should stop being so literal.:-)

I must point out that I used both ground beef and ground turkey.
How do you manage to cook only the precise amount to be eaten at one
setting?

We eat leftovers until they're gone- with the exception of soups,
which I freeze until I want that type of soup again. Right now, we're
out of home made soups, and have enough leftover chilli for one meal
for one person. I'll probably have canned lentil soup for lunch, and
frozen prefab pizza for supper. Toci

I didn't add anything except beef stock, onions and garlic to the beef
