Is there a correct lens and technique to use.

Generally you should try to shoot with a portrait lens, which in this age of
zoom lenses means 70-85 mm. for a 35mm format. Stay away from wideangles at any
rate. Your lighting should be very good, as a studio photographer would do it,
with no bleached out highlights, and detail in the shadows.
Think how the final statue will be lit and observed too, and shoot some that
way.
