Has anyone figured out how to view these shitty flash/java(script)
websites without installing a shitty proprietary piece of shit (like
an Adobe plugin)?

iceweasel + gnash ain't cutting it.

I can't even function on banking sites with the latest standard debian
tools. To be clear, I blame the banks for that.. but that doesn't
solve the problem. (Although if someone knows of a text-based
ssh/telnet bank, I'd switch in a heartbeat).

If iceweasel or gnash aren't working for you then you have two
choices, either don't use those sites or install Google Chrome which as
of Version 27.0.1448.0 (on my system) has built in/bundles Flash Version
11.7 r700. I know, not the answer you were looking for but that's all
I've got.

Firefox (since about 15.0) has a built-in. What does
Iceweasel show in the pull-down selector of:

Edit->Preferences->Applications->Shockwave Flash file

does it have "Use Shockwave Flash (In Iceweasel)" as one
selection?
