I was wondering if these two words are combo words having 'aab' following 'sharr' and 'sar'.

Although Platts doesn't say so but there is a word 'sharr' meaning evil/wickedness etc so if we combine sharr-aab it makes water that does evil/bad things which can easily be extended to frivolous as well.

similarly 'sar' generally means head/top etc so sar-aab means surface of water which in way reflection of mirage therefore saraab.

Kala SaaHib, aadaab 3arz hai.

It seems Kala SaaHib that instead of posting a response here, I sent
it to you directly. Here is an amended/truncated version.

The reality, Kala SaaHib, is that "sh-r-b" (in this order) has to do
with drinking and "sharaab" is a drink and by extension "alcohol". "q-
t-l" is to do with killing, "3-sh-q" to do with loving, "sh-3-r" to do
with "perceiving", s-'a-r" with flowing and so on and so forth. This
of course only applies to Arabic words and not Persian ones and "aab"
is Persian for "paanii".

aap ne "sharr" kaa zikr kiyaa hai aur is silsile meN maiN aap ko
bataanaa chaahuuN gaa kih "sharr" to hai hii "sharaarat" kii haR!
