Brewed a Trappist Strong (for lack of a better style name)
today. 1.100 OG, modeled on Rochefort 10 and
Westvleteren 12. Big, varied grain bill, 2# of
dark candi sugar, the Rochefort yeast (1762) that was
built up with a two gallon starter. About 30 IBUs of
Styrian Golding and domestic Tetts. I'll bottle condition
this one; don't want it taking up one of my taps for the
next two years. Besides, BC is the correct way to condition
a Trappist-style.

Should be a great beer.

I may do an east coast porter on Sunday.

I'm doing a Porter on Sunday night, my first batch of this. Then as
soon as that is bottled, I'm doing a batch of Canadian ale for all the
friends who are after lighter fare.

I completely ran out of my red ale this weekend. The holidays were hard
on it, and the sad thing is probably two six packs worth went to friends
and relatives who would have been happier with Bud****r. Sheesh, *I*
coulda drank those bottles...sniff.

Maybe I'll brew straight rice malt for these infidels ;^)

I'm brewing this weekend! My second batch ever (a chocolate stout) is
boiling now as we speak! (Don't worry - I'm periodically wandering away from
the 'puter to stir it, make sure it doens't boil over, and just admire it).

I still have some bottles from my batch #1 (an amber ale from a kit my
brother gave me for Christmas) to drink tomorrow while I watch the big game.

Happy brewing, everyone!
