I've been told that charging uppercuts will hit Z through the larriat
most of the time on HF -- as do Honda's headbutts -- been too scared to
try this, though :)

try this (only against humans):
sit in a defensive crouch and keep a finger near roudhouse and fierce
1. if they walk up to you, hit them with the ducking roundhouse to keep
them away (or hit them if they screw up)
2. if they jump at you, immediately nail them with a charging uppercut
3. if they hyper-larriet (immune to sweeps) towards you, hit their hands
with a ducking fierce
note: a really good Z (or the computer) can SPD you from just out of
reach of the ducking roundhouse, so don't depend on this tactic
exclusively

backup plans:
(a) jump punch at last second and combo, or (as you said) jump punch at
near the last second and immediately jump away and punch
(b) hit them with standing fierce as they approach (works great on the
computer)... for this to work against a human Z, you'll need to retreat
a bit as they approach, so they don't know when you will lash out
(prevent a well timed larriet)
(c) play power Balrog - use lots of TAPs and rushing straight punches :)
(just kidding -- you will eat larriets like there is no tomorrow)

I think this is true... but I don't use charging uppercuts much on HF
enough to be sure;
