You want recipes... go to foodtv.com and look at the recipe list for Emeril
Live.
But since we're on this topic, let me throw my mother's recipe for Cranberry
Relish at you, seeing as how we're a couple weeks off from Turkey Day:
Dissolve 1 box of raspberry Jello in a cup of hot water. Add 1 1/2 cup sugar,
1 cup of crushed pineapple (well drained), 1 lb of ground cranberries (doesn't
matter how one grinds them -- when I was growing up, we used a meat grinder),
and 1/2 cup chopped nuts to start (suit to taste. I typically use walnuts).
Once it's chilled and set, you can mix it all up to make it look like a
relish. Good stuff.

Hey! Watch it with that thing. It's got a nail on the end of it.
You could put someone's eye out.

the first place, but I digress)

You mix mustard in with the ground beef, yes! A good Brown makes it
quite nice, but even a lousy yellow will do. I prefer Batempi, you
can get it at Sampson's deli in La Jolla.

Excuse me, but is there an In-N-Out on the trip back? Could I order a Double-Double, if so? Just to tide me over
until your burgers are done....
BTW, I am the proud recipient of a brand-spankin', new 50th anniversary INO T-Shirt. One of the guys at the shop

Okay, I stopped by what used to be Lucky's and picked up a pound of burger,
some buns, and some
what-used-to-be-store-brand-until-the-other-chain-bought-us-out brown mustard.
Tried adding 1 tablespoon to 4 ounces of burger, Didn't notice that much
difference, so I upped it to 1.5 tbs/4oz, which seemed to work a little
better. I'll have to up it to 2 or 2.5 on the next batch.
So, how much do YOU add?

We're still hashing that last one out, as I remember. You may prefer Pizza

Domino's is setting up (or is already beta testing) an online ordering

I know that question is for Gene, but I'll throw in my $.02 anyway.
Using my usual measurement standards: a bunch.
(that'd be about 1/2 to 3/4 cup to 11/2 lbs. of beef).
Oh, got a great recipe for Pineapple Salsa yesterday at the S.F.
Seafood show:
Uh, this is using my usual measurement terminology, again.
-handful crushed pineapple
-1 bunch of green onion
-as much cilantro as you can stand
Food processor. Excellent on the seared ahi sample I tried.
I'm going to try it on some kinda teriyaki/beer marinated pork chops
tonight.
Oh, that cranberry recipe looks excellent- I'm going to try it over
the holidays.

Tried my hand at the burgers over the weekend, as previously noted; the other
gentleman suggested a substantially larger amount of mustard than I had added
initially; this had the effect of causing the meat to fall apart in the pan. I
ended up having Geno's Mustard Joe sandwiches. Turned the plate yellow.
You didn't mention this possibility; do you also add anything in the way of a
binder so the patty doesn't fall apart?
Let's tweak this recipe a bit...

When I do my Tery-Burgers (Far more moist than mustard) I have used

Right. I asked my sister yesterday about this problem, and she also suggested
the oatmeal; apparently she uses it in her meatloaf recipe. She also suggested
crackers.
This weekend, I go for Round 2.

I prefer the oatmeal. Put it in a blender or food processor, about
1/4 cup at a time. Blend until it is the consistancy of a thick
flour.

Okay, the common consensus is oatmeal.

As am I. Tried round 2 last night; didn't quite pan out, as I don't think I had
the oatmeal ground fine enough, and I undercooked the burgers (probably because
I was getting impatient). So far, I'm at:
1/2 lb beef (makes two patties)
1/4 cup brown mustard
1/4 cup oatmeal, ground
(debating a clove or two of garlic)

Two patties?! What's wrong with you? and mustard and oatmeal? My god!! talk
about ruining perfectly good hamburger. never never never add anything to you
hamburger meat when making patties. It ruins the meat. And you only get two
patties. I can make a whole meal out of a half a pound of hamburger. THAT'S WHY
I DON'T ALLOW MEN IN MY KITCHEN!! Wasteful wasteful wasteful.

Sorry. Wrong movie.
As for the oatmeal, you of all people should know the necessity of adding a
binder whenever it's necessary... or haven't you made meatloaf before?

Dear, those two patties *are* a whole meal.

No. This is MINE. The recipe that brings me back. The stomach I serve in

Allright, Jana, at the risk of sounding sexist, this is EXACTLY why I
do the cooking around my house. My wife agrees with you.
"Never add anything to the meat" indeed.
Onions. Mustard. Garlic. Oatmeal. Shredded cheddar. Green chiles.
Same goes for scrambled eggs.

Nuh-uh. Gotta add salsa in scrambled eggs. :)

This one agrees with you (except for the unforgiveable omission of the
salsa).
Start by adding the two cloves of garlic; if that's not enough we
can always add more...
Shades of White Castle! And besides, two 1/4 pounders **IS** a
whole meal...well, when you add the beer it's a whole meal...and, yea, you
do need some chips as well...

What's the purpose of scrambling them if you're not going to add
anything to them?

Let me just mention that in 1994, a precedent was established that should
there ever be a White Castle anywhere within reasonable distance of a
Philalethes meeting, all those who had never eaten at a White Castle would be
duly initiated into the mysteries of the mystery "burger"! <G>
I swear that Allen Roberts' was never the same after that trip..... <BWG>
To this day, the tradition continues - but, of course, there a precious few
opportunities for such initiations. We had imagined a pin and card, somewhat
akin to the "Turtles" but we couldn't agree on how to make a belch on a lapel
pin <G>. Perhaps there'll come a time....
I should note that SOME supermarkets now carry a 12 burger package hidden VERY
deeply in the frozen food section (often next to the Kosher foods, the bulk
ice, or in other very low traffic locations). Look for them on your next
shopping trip - and remember the 'feeling' all over again! <GGGGGG>
