obtained recipe from Amish friends. this makea a really nice meat whether
canned, eaten fresh or frozen.

Bologna recipe for 100# of meat

100# meat (add about 3 cups of liquid lard)

2 oz black pepper

1 ½ oz coriander(ground)

1 tsp garlic powder

2# cornstarch

4 tsp ground mace

24 oz salt

2 tsp. saltpeter

2# tender quick

mix tender quick, salt and salt peter and sprinkle over meat and grind. If
starting with ground

beef, skip this grinding and just mix in the mixture well.

Let stand about 3 days, then grind again. Then mix other dry ingredients in
about a gallon

of water and mix in meat. Add liquid smoke. Grind again and tube.

One-quarter batch

25# meat (add 1 ½ cups liquid lard)

½ tsp salt peter

6 oz salt

½# tender quick

½ oz black pepper

½ oz coriander(gound)

¼ tsp garlic powder

½ lb cornstarch

1 tsp ground mace

liquid smoke to taste
