I bought a Honeysuckle brand 13 pounder today. Fresh, not frozen. Paid a buck per lb. But now I'm thinking, did I buy too early? Is it ok to leave it in the refrigerator for 6 days? Usually I buy frozen, leave in the refrig freezer and change to the refrig for three days, or less if it's a smaller one.... more »

I bought a boston butt from a local school as a fund raiser - outside looked good and all. I started slicing it and all (wasn't tender enough to pull). I cut down into it and there was this jelly like substance in the middle of it - could it be coagulated blood? I'm just not sure that it was completely done. I've smoked butts before... more »

I've seen the thread on brining a turkey. It isn't of any help to me. I really want an honest recipe to brine the turkey for T-Day. I had one, but a computer crash deleted it. 20 lb turkey in my NBSS, am I crazy? It doesn't fit (due to height) at the main grate level. But, I have a few extra grates running long ways a bit closer to the bottom of the main chamber. If it fits there... I know I am in for a long cook... anything else I need to be aware of? TIA, Rob Que for all so long as it's not parboiled ribs.... more »
