I was thinking of doind one of these for the game on Sunday. It's a
1:00 game so it'd be a mid afternoon meal. I'm guessing I'll serve it
as samwiches so I'm looking for any ideas on serving suggestions?

Well what a disappointment that was! The tongue came out very tough
and dry. Not sure if I'll try it again.
I boiled it for 1 1/2-2 hrs, pelled the skin off and smoked for 2 hrs
with bacon on top of it.

You cooked it to death in the water while you were removing any remnants of
flavor to be dumped down the drain.

Next time, just smoke the damn thing.

The onced I ever parboiled,twas only 20 minutes.
Skins off like a dream either way.

I'm glad you took it upon yourself to respond to that in a civil manner. I
was going to tell him to boil it in liquid smoke but I managed to restrain
myself.

My response would have been to invest in a decent set of knives.

Not sure where you're going with the boiling in liquid smoke. It's a lot
easier to just inject. ;-)

Naah. Start a wood fire. Put it out with water. Save the water. Repeat until
you can float a tongue in the water. If you're picky you can strain the
water first.

Just sayin'.
