added, it's just concentrated. Doesn't replace the beautiful char on
BBQ and the crusty edges, but you can do it inside in the winter
without a $1500 grill top range.

Which is just further confirmation of why I regard their comments, reviews,
and recommendations with a bit of a grain of salt.

Liquid Smoke brand (Colgin's) has vinegar in it. As someone who cooks
over wood on a regular basis, I think that the stuff is best left on
the grocer's shelf. I guess it does go well with Kool-Aid though.

I'm not a fan of the stuff, but there was a recent food network program
where they showed weird food science stuff and debunked myths, hosted by Ted
Allen, although I don't recall the name of the program, it seems to be off
the air now. They did a test where they took two groups of NYC firemen and
fed them both barbecue spareribs, one prepared traditionally over a wood
fire in smoke, and one prepared in an oven using liquid smoke. Then they
blind tested them to see which they thought was authentic. The majority of
them picked the liquid smoke product as authentic.

I won't take sides on the Liquid Smoke debate, but we don't use it
here since I have the means to do real smoking.

In the piece mentioned about the test of liquid smoke vs. real
smoking, I think its reasonable to factor in the time limits,
facilities limit and cost limit imposed on so many folk. Not
everyone lives on 6 acres, has a window opening onto a fire
escape, has a balcony/patio or can afford the time to do it
"right."

Even Alton Brown made some liquid smoke on his show once, using a
clay "chiminea(sp?)" and inverting a cold lid to condense the
moisture and cause it to drip into a receptacle. In that case, I
saw little difference in that version of smoke and what would
condense on a cold piece of meat during a cold smoking in my own
Bradley.

Easy. Take some scrapings of hardened creosote from a chimney. Put the
scapings into a water. Soak overnight. Taste. Voila... liquid smoke.

So? A good many folks think the McRib is the height of bbq ecstasy. But if
you think the oven/LS comparison is an equivalent to real bbq, believe me, I
won't try to dissuade you from that opinion. If you don't think that it is
equivalent, then why did you bring it up?

Just because it was an interesting development. Are you saying I shouldn't
have brought it up for some reason? Do you see one logical bit which says I
agreed with the comparison, and if you got out of it that I said I thought
it was equivalent, you're a much more creative reader than I.

It just points out that people can be fooled fairly easily. Nowhere at all
did *I* say it was a comparison to real barbecue, I explained a comparison
someone else had done. Let me know it that's a problem for ya.

Well I didn't ask for a cite on how creosote is made, I asked for one that
shows liquid smoke as sold as a seasoning is creosote. In other words, I'd
like to see a cite of the last sentence you wrote in your post. It just
doesn't sound quite right. The information you posted only describes
creosote, not liquid smoke. I'm not saying you're wrong, I'm asking for a
cite. There's a difference.

Yes, by virtue of including that bit with no comment as to disagreeing with
what the bit concluded, ie oven roasted with LS was preferred to actual bbq.

You were the one that included the bit without explanation as to why nor
with any comment as to agreement or disagreement. I also stated "If you
don't think that it is equivalent, then why did you bring it up?" As you can

creative reading involved, just the reading of the words which you wrote.

Fair enough. I kinda figured that had to be the case which is why it
surprised me that you included it without any explanation as to why. The
only problem is the snide and patronizing tone implied in your last

The same process that creates creosote is the same process that creates
liquid smoke. Wood smoke that is introduced to a cooled surface to create a
precipitate of the particulates.

I have no cite as I have not looked for one; the process of creating LS is
identical to the process of creating creosote. I'm sure a lot of folks have
observed the same. But let me ask: Aside from allowing the precipitate to
harden, what is the difference between how creosote is formed and how LS is
made? If there is a difference, I'm not aware of it.

Nope. What is absorbed into the meat...creating the reddish "smoke ring" are
the nitrates and nitrites which interact with the myoglobin.

This isn't exactly it, but what I've tried from memory--you take some
ribs, like those country style ones that are already cut up for you,
and you boil them in some water with a little salt, meat tenderizer
and Accent (tm) then you put them in the microwave until they start to
sing, and curl up a little. Then you put your "rub" which is made of
cherry Kool-Aid (the trick is to use the name brand Kool-Aid, no cheap
imitation "knock offs") some seasoning salt and some Liquid Smoke,
then you crisp them up nicely under the broiler (that's the top heater
in your oven), serve with a nice BBQ sauce like Kraft's (again spend
the extra money on the "real thing") and enjoy!!!!

I like to serve them with Van De Kamp's baked beans and sometimes I'll
splurge and buy an extra large container of cole slaw from Kroger's.

PS: If the ribs are too chewy, it means you haven't boiled them long
enough.

Forgot to mention that you just use the unsweetened Kool-Aid powder,
you don't actually use the drink mixed up except when your ribs are
done and you need something to wash it down with.

I'm kinda partial to Bush's baked beans. This is sorta like Coke
and Pepsi.

myoglobin and occurs in some (not all) BBQ'ed, smoked-infused meat.

The smoke infusion itself (of meat, or vegetables for that
matter, which contain no myoglobin) contains the same substances as
are in liquid smoke. Not identially the same, I am sure --
any difference in process results in some different
chemistry -- but substantially the same.

Not at all, Steve. Now, if you put cold meat into a pit, or use heavy smoke,
you can get a precipitate -- a lot of pit masters refer to it as
"creosote" -- from the smoke that is the exact same as liquid smoke. What
infuses into the meat during bbq is not the same as LS. In fact, once you
get past the bark, there isn't much of anything resembling a 'smoke' taste.

Well, I do agree that nitrite ions are formed when nitrogen
gases reach the moisture within the meat. Not so sure about

Interesting. So basically, you are saying that liquid smoke
contains a certain fraction of the compounds that were in the original
smoke, whereas typical BBQ is infused with a substantially different
fraction of the compounds from the smoke, and so they are very different.
I can't disagree with this; I know they are somewhat different, but
I wouldn't have guessed the difference to be "creosote" vs. "non-creosote".

Where do the nitrates and nitrites in smoke
come from, assuming wood that has simply been
dried, and not treated with anything? Nitrates
and nitrates are oxidizers, so why would they
even be emitted by heated wood chips, rather
than being consumed by oxidation reactions with
other components of the wood, like cellulose?

punishment for the 9-11 mastermind, KSM.

An ignorant dude who precooks ribs in the microwave, rubs them in Kool-
Aid, slathers them with Kraft sauce, and eats them with plenty of
canned pork'n beans and Kroger's coleslaw could serve his country
well. The terrorist could be put in a deep pit and folks like you
could defecate on him from above. I can't imagine a meal that'd
produce nastier scat. You could wait until he was starting to dig in
to a plate of Halal goat meat, and right onto his head and his plate
would fall a load of porky hellishness.

No comment on the personal stuff or flames, guys. What I recall
from Chemistry 3xx was the process of FRACTIONAL distillation.
There, by cooling vapors at decreasing temperatures, it was
possible to condense different fractions of the vapor. This is
what Oil companies do, what distillers do etc. No comment but a
question: is it possible that the creosote we find in chimneys is
a superfraction of the distillate, where liquid smoke is just one
of the fractions?

For instance, Bradley sells their smoker and pucks on the theme
that by not letting the pucks burn, but just smolder at a low
temp, far less creosote is formed and the smoke is "sweeter."

It is a by-product of the combustion process. Please find a book on curing
and smoking of meats. This is not special, unique, or tightly held
knowledge.

Why would they not? If your suppositions were true, then why would any
by-products of wood smoke exist at all in the face of combustion? Obviously,
combustion of wood is not a complete combustion, otherwise there would be no
visible smoke or measurable particulates or the range of gases that are
emitted.

decide how best to infiltrate my spine with catheter-delivered medications,

There will be copious amounts of carbon monoxide
in smoke. Carbon monoxide is not completely
burnt, and it can in fact be used as a fuel gas
as is the case in synthetic gas made from coal.

If there were gaseous nitrates or nitrites in
the smoke, that would be a powerful oxidizer.
Why would they not combust with the carbon
monoxide? That would be like having a stream
of hydrogen combined with a stream of oxygen
in the presence of a flame.

The original post was to that football group, the one with all the
trolls. It involved ribs in the microwave with a KoolAid rub.

Anyway, it was amusing for a couple of days, but I'm done with the
Bidnits.

Again, the point is that cabon monoxide is a gaseous fuel.
It can be oxidized further to carbon dioxide, with
a considerable release of energy.

Yes. It is elementary chemistry. Nitrous or
nitric oxide gases are powerful oxidizers.

Because mixing a fuel with an oxidizer
provides the necessary chemistry for combustion,
in the most ignitable form (gases). Combine
that with a source of ignition, and it's hard
to see how it would not ignite, if there were
really nitrates or nitrites in smoke.

No, that's how I refute silly know-it-alls who equate classroom chemistry
and refined chemicals with woodburning and bbq.

As I said before, there are many books dealing with smoking and curing that
will help you complete your knowledge.

I already have plenty of books which cover the
curing and smoking of meat from the scientific
point-of-view. If there was a significant
contribution of nitrates or nitrates from smoke,
they would mention it. They do not. Here's a
small sample from my library (more could be
provided, but that's clearly not necessary):


Quoting from _The_Meat_We_Eat_ by Romans and Ziegler,
11th edition, page 587:

"Where wood is subjected to destructive distillation
it yields inflammable gases, a strongly acid aqueous
distillate and a quantity of tar. The residue is
wood charcoal. The aqueous distillate contains methyl
(wood) alcohol mixed with acetic acid and acetone and
a little methyl acetate and is known as pyroligneous
acid (liquid smoke)."


Quoting from _The_Science_of_Meat_and_Meat_Products_
by Gillespie, page 314:

"Among the chemicals which have been identified in
smoke are aliphatic acids ranging from formic through
caproic; primary and secondary alcohols; ketones;
formaldehyde, acetaldehyde, and other aldehydes;
phenols; creosols; and a mixture of waxes and resins."


Quoting from _Processed_Meats_ by Kramlich, Pearson,
and Tauber, page 68-69:

"Wood consists of 40 to 60% cellulose, 20 to 30%
hemicellulose, and 20 to 30% lignan. During thermal
decomposition of wood or wood sawdust, a temperature
gradient temporarily exists between the outer surface
and the inner core. The outer surface is being
oxidized and the inner surface is being dehydrated
before it can be oxidized. The temperature of the
outer surface is slightly above 212F during the
dehydration process. Carbon monoxide, carbon
dioxide, and some volatile organic short-chain
organic acids, such as acetic, are being released
during the dehydration or distillation process.
When the internal moisture level in the center of
the sawdust approaches zero, the temperature rapidly
rises to 570 to 750F. Once the temperature falls
within this range, thermal decomposition occurs and
smoke is given off. Actually, most of the changes
in wood of any consequence to smoke generation
occur between 390 and 750F. In the temperature
range 390 to 500F, the release of gases and a sharp
increase in the amount of volatile acids is evident.
Between 500 mand 590F, pyroligneous liquor and some
tars are produced. As the temperature reaches 590F
or above, lignan is decomposed, yielding phenol and
its derivatives."

From page 70:

"As soon as the smoke is generated, numerous
reactions and condensations occur. Aldehydes and
phenols condense to form resins, which represent
about 50% of the smoke components and are believed
to provide most of the color of smoked meats."

If you think anyone actually believes that, you're completely
delusional.

You've been busted at this game so many times I've lost count.
Your main tactic is to try to weave together enough pseudo-scientific
garbage that the uneducated won't know the difference and *may*
be baffled by the bullshit. That's all you do. You're a one
trick pony.

Problem is you've gone too far, on too many occasions. The "Food
Grade Propane" thread is just one example, but it was significant
in the sheer clarity that it brought. Even little children could
see the shell game going on.

I cited directly relevant quotations from
respectable scientific literature. Just because
it uses words like "aldehyde" and "pyroligneous"
that you don't understand does not make it
either "pseudo-scientific" or "bullshit".

I cited evidence to confirm everything fact
I asserted. No critic could cite any evidence
to refute even the slightest detail. You lack
the ability to tell the difference between
reliable sources of information, such as the
food science books I quoted, and unreliable
sources -- even if someone had attempted to
cite an unreliable source to refute my references,
which so far nobody has.

from smoke are responsible for the smoke ring.
There's hardly any nitrogen in wood, and what little
nitrogen it has is in the reduced form, not oxides
of nitrogen (like nitrates and nitrites).

When I quote from books written by professional
food scientists, you sneer at them because they're
not the kind of books you've ever seen. They're
not the kinds of books you'd find at the local
Barnes & Noble or your local city library. You'd
only find them at a university research library or
the departmental library of a food industry laboratory.

I go to these books first because they are my sources
for questions about food chemistry. In this case,
I looked up what these sources have to say about the
composition of wood smoke. And they have lots to say.
But they didn't mention nitrates or nitrites in smoke
at all. These same books have large sections on the
actions of nitrates and nitrites in meat curing, but
they aren't mentioned at all in the sections on
smoke.

In other words, I'm waiting for you to produce anything, googled or
otherwise, to dispute what has long been accepted within the food science
community. The googled sources that you cut-n-pasted failed to do anything
other than to show that smoke caan turn the outside of meat a dark color.

Marty, no proof can be cited as liquid smoke > IS NOT < creosote.
Hard to think that anyone here hasn't found a little flake of creosote

There is a ton of easy to find info on how LS is made, refuting any
validity that is it simply creosote. Nor is it made (or formed) the
same way as creosote is in your pit exists as referenced in this
group.

the difference. Making LS is quite scientific.
It is made from real smoke, but has the tars, resins, and particulates
filtered out after capturing the smoke in water vapor.

So, LS is made the same way creosote starts out, it just filters out the
solids. That's exacly what liquid creosote is. One can do the same by
grabiing a glob of the hardened stuff, soaking it in water with a tiny bit
of acid, like vinegar, and once the glob has gone to solution, filter it
through a media.

Dunno... you might have a point. It is like saying crude oil from the
ground is gas. Distilling it, filtering it, homogenizing it for
repeatability, and put in necessary additives for stability are the
only things that make if different from gas.

Same with whiskey. If I am taking the gist of your post correctly,
then similarly, there is really no substantial difference between
whiskey and wort.

Well...in a way. Although the refining process for LS isn't quite so
refined. Alton Brown had a good demonstration of making homemade LS

I didn't Google any sources for the composition of smoke.
As I said before, those quotes came from books in my
library. These books were written by food scientists
specializing in meat. They list the major components
of smoke and many of the minor components. Oxides of
nitrogen such as nitrates and nitrites are not among them.

authorities, and you have nothing equivalent

As I stated before, the quotes I used on the
composition of smoke came from books in my library,
not Google. But if Google is what it takes to impress
you, I suppose I could come up with some links.
Books by reliable authorities are what impress me,
which is why I quoted from them. Perhaps I should
have anticipated that you reject book learning.

retired from the Chelan-Douglas Health District after 16+ years. One of my
projects was working with the WA State Dept. of Ecology on clean air issues
with regard to wood smoke. I'll put up some cites, but I want to make sure
this is your final say-so.

I didn't say _no_ nitrogen, but I certainly find
it hard to believe that there is sufficient oxidized
nitrogen to be responsible for the smoke ring.
My own reliable sources don't indicate any form of
oxidized nitrogen as being present in smoke, which
reinforces my belief.

I've been waiting for you to cite a credible source
for your assertion, but you consistently respond with
insults and ridicule, not facts. You must understand
that a naked assertion from someone who sneers at the
scientific literature cannot be accepted on your own
word. Let's see some of these citations you claim exist.

Yes, the composition of smoke has been extensively studied
by food scientists who specialize in meat. Nitrogen
compounds in smoke are not even mentioned in the food
science literature I have read, even though the importance
of oxidized nitrogen compounds in meat curing has been
recognized for a long time, and methods for quantifying
such compounds in gases has also existed for a long time.

No, that's not true. You are trying to uphold your
reputation as an "expert" on meat and barbeque.
I'm perfectly willing to concede that you might be
more skilled than me at barbequing and smoking a
piece of meat. But no amount of skill make you also
an expert on meat science.

It's like the corner garage. They might be perfectly
competent to replace the cylinder head on my car.
But that does not mean they are competent to _design_
a new cylinder head. That would require knowledge of
combustion fronts, strength of alloys, etc. that they
don't have. A mechanic is not a scientist nor an engineer.

Again, you're trying to re-cast the question into
something else. You are the one claiming that the

For some obscure reason, though, I am the only person

Since whatever quantity of N.O.s are changed by the moisture of the meat
into nitric acid which is absorbed into the meat and interacts to form the
nitrates and nitrites, wouldn't you agree that much depends on smoke
levels... amount of exposure to the smoke?

This is where it is hard to accept you at face value, Mark. You state the
books you find reliable fail to mention N.O.s, and you have argued for that
point, or of minimal and non important availability of N.O.s as a catalyst
for smoke ring production. But then you go on to say that "...the importance

time.." So, there are enough N.O.s to be important to the curing of meat,
but not enough to produce a smoke ring?

I claim no expertise at either meat or bbq. But even so, what does this

Talk about a straw man. Even if I had no education, had the IQ of an amoeba,

combustion produces N.O.s. The seperate but related issue of the
relationship of wood produced nitrates and nitrites via NOXs is one that I
believe occurs.

CHEMICAL CHARACTERIZATION AND POLLUTANT DISTRIBUTION

Woodsmoke is a complex mixture of numerous gases and respirable fine/

ultrafine particles of varying inorganic/organic composition and diameter

(Pierson et al., 1989; U.S. EPA, 1993; Nolte et al., 2001). Smoke generated

from burning wood is thought to consist of over 200 chemicals and compound

groups, which are contained in an effluent that is almost entirely in

the inhalable size range (Cooper, 1980; U.S. EPA, 1993). Woodburning

stoves, furnaces, and fireplaces emit significant quantities of toxic
compounds,

including respirable particulate matter (PM) with diameters <10

?m (PM10), carbon monoxide (CO), nitrogen and sulfur oxides (NOX and

SOX), aldehydes, PAHs, volatile organic compounds (VOCs), chlorinated
dioxins,

and free radicals (Cooper, 1980; Dasch, 1982; Lao, 1983; Tuthill,

1984; Sexton et al., 1986; Traynor et al., 1987; Lachocki et al., 1989;
Koenig

& Pierson, 1991; Hildemann et al., 1991; Koenig et al., 1993; U.S. EPA,

1993; Larson & Koenig, 1994; Nolte et al., 2001).

Under normal usage conditions, woodburning devices create indoor

pollution (Lao, 1983; Sexton et al., 1986; Traynor et al., 1987; Samet et
al.,

1987, 1988). It has been reported that both airtight and non-airtight stoves

release fine/ultrafine-sized PM, CO, and PAHs directly within the indoor

environment (Traynor et al., 1987). Concentrations of PM as great as 820

?g/m3 (U.S. EPA standard for PM10 is 150 ?g/m3 for a 24-h period, not to be

exceeded >2% of the time) have been measured indoors from non-airtight

stoves over a 24-h period (Traynor et al., 1987). In addition to that amount

released directly inside the home, a large percentage (i.e., 70%) of outdoor

woodsmoke from chimneys actually reenters the house and permeates

neighboring dwellings (Pierson et al., 1989). Many circumstances, including

improper installation, negative indoor air pressure, and downdrafts,
facilitate

entry of incomplete combustion products back into the home (Pierson et al.,

1989; U.S. EPA, 1994). Since individuals typically spend 60-70% of their

out-of-work time at home (Szalar, 1972; Chapin, 1974; Sexton et al., 1986),

indoor woodsmoke potentially represents a major source for human exposure.

I dragged out my copy of Heller's, and their recipe
for a dry-cured beef brisket has 1 pound of curing
salt for 100 pounds of beef. Let's scale this down
for 1 pound of meat, to estimate the amount of nitrate
needed to produce 1 pound of smoke ring, then based on
that calculate how much volume of smoke would be needed.

Assume 0.01 pounds, and that it's all sodium nitrate.
(Not likely a correct assumption, but close enough to
be in the ballpark.) There's 113 grams per ounce, so
0.01 ounce = 0.28 grams. Sodium nitrate has an atomic
weight of about 28 grams/mole, so that's about 0.034
moles. Avogadro's law gives us 22.4 liters per mole
of gas (that's at 0 degrees, but we'll ignore that
for now), so that's 0.76 liters of NO2 gas to make
1 pound of smoke ring, if that's how smoke rings are
made.

Smoke isn't pure NO2. Your reference indicates 7.3 kg
of combustion air to obtain 0.2 to 0.9 grams of NOx.
Assuming an atomic weight of 28 grams/mole for air (an
approximation based on N2 gas), 7300/0.9 = 8100 moles
of air. Assuming NO2 gas with an atomic weight of 46,
0.9/46 = 0.02 moles. So, it's about 8100 moles of air
to get 0.02 moles of NO2, a ratio of 8100/0.02 = 405,000.
The amount of smoke needed to make 1 pound of smoke ring
would be approximately 0.76 x 405,000 = 308,000 liters.
And that's only the smoke absorbed by the meat. You'd
also have to produce additional smoke which doesn't get
absorbed by the meat, but I have no estimate for how much
waste smoke you'd need to get that 308,000 liters.

How do we know this doesn't happen? It's because if
that's how smoke rings were made, you'd hear a loud,
almost deafening, hissing sound as that piece of meat
sucked up all that smoke.

Here are the corrected numbers:

Assuming an atomic weight of 28 grams/mole for air (an

The amount of smoke needed to make 1 pound of smoke ring

would be approximately 0.76 x 13,000 = 9880 liters.


And that's only the smoke absorbed by the meat. You'd
also have to produce additional smoke which doesn't get
absorbed by the meat, but I have no estimate for how much

waste smoke you'd need to get that 9880 liters.

That's still a huge amount of smoke to be absorbed
by meat to create 1 pound of smoke ring.

Interesting. However, the process as I understand it doesn't require
absorbtion of smoke by the meat, as I made mention a couple of times.
According to both Martin Lersch and Harold McGee, recognized food scientist
who have each looked at this issue, "When wood or coal burns, small amounts
of nitrogen dioxide is formed which dissolves in the surface of the meat,
thereby creating nitrous acid. The acid diffuses further into the meat, and
when converted to nitric oxide it reacts with myoglobin to form a stable
pink colored molecule."

Total smoke absorption doesn't seem to be the issue, only smoke exposure.

I saw his discussion, a few months back ,on smoke rings in meat, and othe
bbq relate meat questions, at the Home of Barbecue website:

A reasonable estimate of the amount of smoke necessary
to create a smoke ring by an oxidized nitrogen curing
reaction is in the range of about 100 to 1000 times
more than anything you can do in a barbeque. Unless

Let's say you burn a pound of wood over four hours, and all of the
oxidized nitrogen gases produced are absorbed into the surface layer of
(let's say) a brisket resulting in (at most) three ounces of
nitrite-pinkened meat. Suppose there are no other watery substances
around to compete for the nitrous absorption (which I think follows the
experience of BBQ'ers who want a ring).

Let's also say to get pinkness the meat must be 2% cure.
So, you're saying you cannot get 2 grams of nitrogen gasses
out of burning a pound of wood? That there is always less than 0.5%
co-burning of nitrogen?

That does not seem like a lot of nitrogen burning to me.

basis of your supposition was the volume of total smoke needed to be
absorbed by meat, not absorbtion of nitric acid due to oxides deposited on
meat. I think I'll trust the food scientists.

If you can provide specific citations of other food scientists proposing a
different method of smoke ring formation, I'll keep an open mind.

Let's start at the beginning. Do you dispute that
a reasonable estimate of NOx compounds in smoke
is about 1 part in 13,000? If you do, what part
of the estimation do you dispute?

I already have, twice. Quoting from _Processed_Meats_
by Kramlich, Pearson, and Tauber, page 70:

"As soon as the smoke is generated, numerous
reactions and condensations occur. Aldehydes and
phenols condense to form resins, which represent
about 50% of the smoke components and are believed
to provide most of the color of smoked meats."

2% of what? 2% of smoke is not the same as 2% of
a pickle cure solution, because the mass density of
smoke is about 1 kg/m3 and the mass density of the
solution is about 1000 kg/m3. There's a lot more
NOx available at the surface of the meat when immersed
in a pickle than when immersed in a gas.

The important thing is how much of the NOx in the
smoke is captured by the surface of the meat. If the
smoke is slowly swirling around the meat for long
periods of time, the meat, being the only water-bearing
substance in the oven, will end up dissolving a large fraction
of the NOx. If the smoke is moving slowly enough, the
amount of NOx dissolved approaches equilibrium. Nox
captured by the meat and becoming dissolved ions does
not migrate back into the gas phase. The capture ratio

So I would say the percent cure in the smoke ring will be
the product of the following:

(1) Weight of wood burned
(2) Emission factor of NOx for wood-burners

(which is a small fraction of the total weight of the meat).

When you calculate the above with reasonable numbers you get the
percentage cure, it does not depend upon the volume the smoke is
taking up, and it resembles the percentage needed to cure meat.

I don't dispute it or confirm it. I simply find it a supposition based on
what you consider reasonable. McGee and Lersch have studied the issue and
have rendered their professional opinions. We know that nitrates and
nitrites can create the red coloration. We know that nitric acid can create
the nitrates and nitrites.

What is the data set presented by your book?

This quote, as I said earlier, appears more to the issue of outward
coloration of the bark of the meat, not a smoke ring. There is no indication
that the authors believe otherwise. Moreover, no specific data is given.
This is aside from the fact that HOW the phenols and aldehydes, by forming a
'resin', reacts with muscle tissue to create a pink coloration. In addition,
when you presented this quote, you also believed that NOX was not a part of
wood smoke because the book made no mention of it. Food scientists have made
specific quotes about the cause and creation of a smoke ring via nitric acid
absorbtion which, to me, is an adequate explanation. It certainly echoes
what is known about the effect of nitrates and nitrites in cures as they
contact myoglobin.

Which book? My estimate was based on a recipe in Heller's.
I chose the dry-cured brisket because that's closest to
an external application of NOx to cure a piece of meat.
Most of the recipes in Heller's are pumped. However,
I notice in perusing the other recipes that one pound
of curing salt to 100 pounds of meat was consistently
being applied. They don't present the data by which
they determined that amount, but being in the business
of supplying meat curing salts I assume they had some
practical experience which led to that amount.

The figure of 13,000 was based on the data you presented,

amount of combustion air and the amount of NOx compounds
produced, which leads to the figure of one part in 13,000.
I even chose the higher figure of 0.9 grams NOx per kg wood,
when the study gave a range of 0.2 to 0.9, just to give you
the benefit of the doubt.

You wouldn't try to cure meat with a pickle that dilute,
would you? And a liquid pickle would be about 1000 times
denser than smoke, so smoke is even more sparse as a curing
agent -- about a factor of a 100,000 too dilute to be
responsible for the smoke ring. Even if my assumptions
were off by a factor of ten here or there, NOx compounds
in smoke are still so dilute that there's no possible way
they could make a smoke ring.

There you go raising the straw man again. I didn't say
no NOx, but I did not and still do not accept it as
being a significant amount. On the other hand, there's
loads of aldehydes and phenols -- about half of the smoke,
not one part in 13,000. They are major components of smoke,
not trace components.
