WSM Grill and Dome Temps

Now three hours into the pork shoulder barbecue with my WSM. I have a
Taylor's oven thermometer (mercury) on the grill next to the meat and a
Taylor's Candy thermometer stuck down one of the vent holes at the top of
the dome lid. Interestingly, the dome temp is registering 300 degrees but
the grill temp. is registering 250 degrees. I am using sand instead of water
in the water pan. I checked the candy thermometer for accuracy before the Q
and it was right on. I did not check the accuracy of the mercury thermometer
but it has been accurate in the past.

Any comments from the barbecue temple masters?

The dome temp will be higher than the grill temp, although on my WSM it's
usually a 25*-30* difference. Sounds perfectly normal.

I see very little temp difference between the grill and dome in my WSM--
about 10 degrees. I usually cook at dome temps of 225 or so.

I'm sure you're fine-- its hard to mess up with a WSM

It's normal for the dome temp to be higher than the grill level temp. Once
you've done several cooks this way, you know what the variance is and can
make the adjustment from the candy therm in the top. A variance of 50° is
not unusual.

Your mercury thermometers are usually the most accurate of any . It's
what you would use to calibrate an electronic one.

Perhaps just as interesting/important, I find that there is about a 25
degree differential between the lower grill and the upper grill.

And, I promise, I did not use any foil in cooking this time!! I just wrapped
the shoulder in the foil as it came off the grill and into my ice chest.

wrong group! try alt.binaries.food
also get a photo editing program, such as the free one from www.irfranview.com
and re-size the pictures to about 100KB or less. That way, the whole picture
can be on one screen without panning and scrolling and it also lets those with
dial-up connections see the pictures
