The 'dressed weight' (that is the technical term for it) of most carcases of
mammals would probably be fairly consistent given that they share a simialr
alimentary conformation. You start from the weight of the beast to be
slaughtered and dressed and then apply a percentage acccording to the
condition of the animal (it varies if the animal is very poor or very well
conditions). As a very rough rule of thumb, you wouldn't go too far wrong
calculating it as being roughly 50% of the live weight.
And before anyone comes back with 'if's buts or maybes', please note that I
did say it was a rough figure. I know what those 'ifs buts and maybes' are
but for someone who knows nothing about dressing weights, 50% is good enough
to start with.
