Great beef brisket near Austin

I just got back from two weeks in Austin. While there, one of our jaunts
took us to Bartlett. Coming back on Hwy 95, we stopped for gas. While
filling up, we noticed a small non-descript 'building' alongside and
slightly back, with a small sign, "Perez BBQ". I'm glad we tried it. I know
I'm a city boy from the Left Coast,but that may be the best brisket I've
ever had; juicy, tender, textured, nice ring, good color, just enough fat,
yummy. My wife had the BBQ pork ribs, a little drier than I like, but quite
tasty and with an adequate dip. My buddy had some of their homemade
sausage, which was outstanding. I think they have some other stuff on their
menu, too, but not much. They custom make sausage, including venison.
Victor, the son of the owner, is 44 and has never been out of Texas! He
told me they smoke the brisket for 12 to 15 hours at around 225 F with oak,
but wouldn't talk about possible marinades, rubs or mops. They're only open
Saturday and Sunday. Contact them at POB 344, Bartlett, TX 76511 or find
them!

Just another reason for me to back to Texas.

I 'spect I'll be back in a few months and I'll bring some homegrown black
Thai chiles. Will ya gimme another chance?
