I was reading a book recently about John's last few years, and one
part is about a new recording contract that he was talking to Milt
Okin (sp?) about. Anyway, John told him he wanted to record an album
of songs he wished he had written. What songs do you think it would
have contained?

"From a Distance" by American singer-songwriter Julie Gold, maybe?

"I'm Proud To Be An American" written and sung by Lee Greenwood

"Let There Be Peace On Earth" (I don't know who wrote it.)

I remember during his concerts (I want to say in 95) he said he wished/
should have written "Mother Nature's Son" by Lennon and McCartney.

I do remember him saying he was going to write Mother Nature's Son but
some one wrote it before he got the chance He said that about several
songs, but I can't remember which ones.

Another song that he said he had wished he had written himself (he
mentioned it at a couple different concerts I attended) was "The Flower
That Shattered The Stone."

I also bet he would have liked to have written Bob Dylan's "Blowing In
The Wind"

John Lennon had nothing to do with "Mother Nature's Son". It was
written and recorded by Paul McCartney.

True, although the distinction is semantic. Lennon and McCartney
wrote very little music together, it was nearly all individual efforts.
But when referencing either artist, the copyright names both.

BTW both McCartney and Lennon are/were JD fans.
