Neither batch of bread -- white or rye flake rose very well or had the
usual oven spring. I was using the very same ingredients that I
always do and used a thermometer to check my temps. I suppose it
could be me. Just seems odd. On sunny days (high pressure days) I
usually get the best rise.

Funny thing about baking bread. I wake up and plan on the best bread ever.
Some days I see real progress. Other days, not so much. I sometimes think
that when the weather is not so good, I find myself working extra hard to
compensate for pressure and humidity. Bet the next time you have those great
conditions, the bread will live up to your expectations.

Getting ready to head on down to Sacramento for my daughters
graduation(grad. degree in social work). Will bake her favorite pumpernickel
bagels. Well, I have to eat when I am down there, too!

It is because, we, as a country, have turned away from the Bread
Faeiries.

It just happens once in awhile. I do think the weather, inside and out
has something to do with it, but I cannot tell you what subtle
variables or set of them influence it all with any consistency.

I suppose we could rely on my old answer in cases such as this: shit
happens.

I would, except when I see what it has taken. Full time job including a load
of casework all over the county, full load of night class AND interning
with a psychologist office. She literally has had not a day off, including
Sundays, in a year.

There are a lot of hardworking kids out there, pushing to get through
grad school, and I see way too many of them having difficulty getting
decent jobs afterwards.

My kids are in their mid to late 20s and I witness this with too many
of their friends.
