Active or noy ?

Hello all !

Some bred recipes call for
Active dry yeast and other for Dried yeast...

I have a fine semolina like brown powder
named lyophilised yeast !

Active or not ?

There are 2 types of dried yeast available to amateur bakers. "Active
dried yeast" has granules about the size of a sesame seed and requires
activation in warm/hot water or a very liquid preferment. "quick
acting" yeast comes in much smaller granules and can be mixed directly
with the flour because it has a higher proportion of living yeast
cells and is mixed with an emulsifier.

If it's a fine powder it's probably quick acting yeast.

Confusing isn't it?

active dry yeast seems faster than dried yeast !

What I have is fine powder...
And seems to give fine results as dried yeast !

I also saw a mix of sodium bicarbonate with some phosphate(?)
and wheat gluten that could be faster ???

Hi Gerardus, the hardest part here is you aren't in the same country
and cooking terms may not match on this one. The 'fine powder' is an
indicator of possibly a breadmachine optimal yeast. Quick Acting or
Rapid Rise are common names. If the yeast says 'for breadmachines'
then apt to be right. If it has directions to proof in water or mix
with water at the warm temp, it's not the right stuff.

Breadmachines expect the yeast to be dry and added to the top of the
flour (water/milk goes in first, then flour and other dry items on
top). The type of yeast that you let bubble in warm water first then
hand make bread from is all wrong for the machine.

My bread machine ask for one or the other depending whether it is a fast bread
or not.

zojirushi-bread-machine BB-CEC20 manual used the same idea...

I will look for Fleischmann web site later !

No clear information on their website :-( !

I tried "brioche" with dried yeast insted of active with a lumpy result...

Sure : salt kills yeast...


But there should exist "Dried yeast" and "Active dried yeast"
and I'm not able to locate, I think, the second one !

what country are you in? If in the US, any yeast you buy in a package
is "dried." Active dried yeast is the most common and will say so on
the package. The other yeast is "Instant Yeast," or "Bread Machine
Yeast," and will also say so on the package. You will not find a
package labeled dried yeast as it doesn't describe the contents fully.

If you are confused, write the names down on a slip of paper before

Be aware that SAF Instant yeast is also a product of Red Star and be
sure to read up on it on their site.

normal and fast !
