mIRC has plenty of info but I've always found it too much like a programming
language, ie, difficult. Lots of obscure commands that are meaningless to look at
and not intuitive.
I'm surprised someone hasn't come up with a modern interface with a GUI for IRC.
Comic Chat is the last one I can think of that was easy to use. The Java based ones
on some sites are easy too.

Mozilla has Chatzilla, but I don't find it as versatile as mIRC.

I think you should try mIRC (http://www.mirc.com). I've been using it
for about 8 or 9 years now, and it's great. It's a scriptable client
also, which means you can make your own scripts with it (to automate
tasks, respond to events, etc.) You can find some information about IRC
in mIRC site too. For scripts, you can visit http://www.mircscripts.org
You should also visit http://www.irchelp.org for help with IRC, lots of
doscuments, FAQs, tutorials, and guides. Highly recommended.
And if you are looking for more technical information about IRC, like
architecture, channel management, client/server protocol, you should
read the IRC-related RFC (Request For Comments)
http://www.rfc-editor.org. The files you are looking for are RFC 2810
(Internet Relay Chat: Architecture), RFC 2811 (Internet Relay Chat:
Channel Management), RFC 2812 (Internet Relay Chat: Client Protocol),
RFC 2813 (Internet Relay Chat: Server Protocol), and RFC 1459 (Internet
Relay Chat Protocol). RFC 1459 is now outdated and replaced by other
RFC (2810/2811/2812/2813) but it's still a fun to read.
Regrading a Visual IRC, well, I used to use Microsoft Chat (or
Microsoft Comic Chat), it was a visual IRC client, looks like a comic
story, you choose a character, and messages (text) appear in balloons,
etc. It was shipped with windows (9x, I guess), and was used mainly on
MSN chat servers, although it can connect to any/other IRC network. I
stopped using it long time ago, although it was fun. I tried to search
Microsoft's site for any information about it, but, unfortunately, I
couldn't find any. Although you can still find some help articles about
the program (how to do this and that) in their knowledge base, by
searching for "Microsoft Chat" from the main Microsoft site. Your best
bet is Google, but, I only find this to be useful/related to the
program http://www.mermeliz.com.
