Oh, for heavens sake, we _do_ see these changes. Bacteria can evolve in hours. Where do you think the enormous spectrum of dogs came from? (Dogs are to wolves as humans are to apes).
If you didn't know they'd all evolved from the same species, would you imagine that a St. Bernard and an Yorkie were of the same species?
As to the big breakthroughs, like when several bacteria got together to form a shell, and when multiple cells got together to form a multi-cellular organism, we pulled the ladder up behind is, any attempt to do that again would be too primitive to compete with the ones already there.
