Bulgarian Marinated Shrimp & Minted Feta Cheese

Yield: 2 servings
16 ea Fresh large shrimp peeled & butterflied & deveined
4 tb Olive oil
2 ea Garlic cloves minced
1/4 c White wine
Salt & pepper to taste
4 ea Fresh mint sprigs
2 tb Fresh lime juice
2 tb Fresh lemon juice
3/4 c Crumbled Bulgarian feta cheese
Pre-heat your grill.
put shrimp, 2 tb olive oil, garlic, wine, salt & pepper to taste in a
bowl.
Toss to mix well.
Set shrimp aside then allow to marinate for 5–6 mins.
Strip leaves from 2 mint sprigs the chop coarsely.
Set chopped mint aside.
Transfer shrimp to grill then discard your marinade.
Grill over med-high heat 2mins. per side until shrimp are just cooked
being sure to turn once.
Transfer shrimp to a bowl.
Add your remaining olive oil, chopped mint, lime juice & lemon juice
then set aside until shrimp cool to room temp.
Divide shrimp evenly between 2 plates.
Pour your dressing over shrimp then sprinkle feta cheese over them.
Garnish each plate with leaves from remaining mint sprigs.
