Secure access

Is there anyway to put some kind of security on the access, such as a
PIN of a passcode? Just as one has to do with the Apple Remote. This
would be beneficial to prevent other people from connecting. I am
planning on maybe using this at our Pub to control the music playback
from behind the bar and would like to secure it just in case.

Suggestion: choose a different port on your router to forward to
Signal's port. Somebody would have to have Signal *and* guess real
good to connect.

I would be on the same LAN segment so no router would be involved

LAN with Signal? No router would mean someone would have to plug in to your switch to access Signal. That seems even more unlikely than someone guessing a 1 in 50000 shot at your port...

Currently there's not a security feature like what you're describing,
but it is something that's being considered either through a pairing
process or password.
