Are you using an Epson scanner and scanning from inside Photoshop?

Doing that will result in the folders that you are seeing in your Prefs Folder.
They serve no purpose and can be trashed.

Scan using your scanner software as a stand-alone application and you will no longer have this problem.

Does so in the library/ preferences folder. One folder on each startup, empty, with a name full of nothing but junk. Then, eventually (after maybe a dozen folders are created) it'll crash completely. Sometimes putting junk all over the monitor - looks like a bad video card, except it's ONLY with PS. It also says I'm missing a couple of plugins (which are in the folder, but in red). I'm using CS2 on a very recent iMac. Any thoughts?

Makes sense - I've recently installed an Epson printer/copier/scanner/toaster/microwave on that computer. Where might I find this twain driver and eliminate it, so I can go back to my regular oven?
