I get raw milk straight from the farmer.  Last week we got an extra gallon.  Also, some of the milk was a bit sour, so we weren't enjoying it for drinking.  As a result, I had some extra milk and needed something to do with it.
 
There are plenty of cottage cheese instructions out there, but most of them require a commercial starter.  I'm sure that traditionally that wasn't necessary.
 
Finally I found this recipie:
 
 
The milk that I used was fresh when I started.  I ended up letting it clabber for about 24 hours.  I think this was too long, as the cottage chese was a bit too dry.  However, it still tasted good with some jam mixed in.
 
I'll have to try it again.

Thanks for posting the recipe, Jay! The info about it being too dry is helpful for me - I WANT it to be dry for this SCD I'm doing - this is perfect!

Jay where do you get your raw milk?? I would like to get some. Also I
would like to take you up on the offer of a kombucha starter. I am
ready to start making some. :)

I own 3 shares in a herd of cows, which entitles me to 3 gallons of milk/week.  I pay boarding fees of $27/share, which works out to about $6 for each gallon.  The milk is excellent.

Before I give you kombucha, I need to maek a batch myself, to make sure that my cultures are still viable.  So busy with the twins that I haven't had a chance in a while.  I'll post here again.

Hi Jay,

I just wanted to tell you not to stress about the Kombucha because I
got some from someone close to me. She put it on Craig's List. Also I
am very close to getting fresh raw milk. I left two messages for Stan
Holy but he must not have any extra milk because he hasn't called back.
Thankfully there is a new drop very near me for raw milk from Jackie's
Jerseys. They are having and open house for taste testing and to see
the set-up. Very exciting. Thank you very much for offering the
kombucha in the first place. I have twins also to I know how busy you
probably are.

Don't assume anything just because Stan isn't calling back!  He may be good at milking cows, but he's definitely not good at returning phone calls.  Keep calling him.
