It's totally freakin' hot here right now. The BBQ doldrums appear in July
and August when you live in the Southeast. It just gets to dern hot to cook
when the temp gets up around 95 and the humidity hits 90%. However, when
the yankees are dealing with the snow and ice, I am firing up on a cool
clear night!!

I wish I had some free time to get up to visit Glenn. Working in retail is
not one of lifes true pleasures this week.

Currently 67 in Chicago. The SS-One is chugging along nicely and my
butts are just hitting the stall, so I'm going back to bed. I think my
attitude about multiple pits and cooking often would change if I had
your weather!

Jack Ill be thinking of you . Its aboslutly gogreous weather here in
upstate NY from April all the way thru the 1st part of November . December
isnt to bad but Jan & Feb really stink unless your a skier . we go to South
Flordia for 2 wks in Jan & We got a timeshare in Aruba for two weeks in Feb
then we go back to Flordia for a week in march that breaks up the winter
pretty well for us . Come up to NY area to visit some time

The Canadian Navy spends a lot of time in the Caribbean in the winter, so I know most of the islands well. Personally I prefer the British Virgin Islands or Barbados to the Bahamas.

Hi folks, I'm new to the group and must say "I'm impressed", a good bunch of people with a common goal, "The Best Bar-B-Que in the world", thanks for all the tips!!
I hope that everyone will have a very safe 4th of July, dont give Smokey a chance to hang wallpaper on you and enjoy our friends and families!
I'm still green at this but do have some past history in smokin' fish since I'm from Fla.

Yes Sir Mr. Bruce, To answer you., I'm from Apopka Fl. and I've been to Micanopy a few times too. Most of the time I'm on the eat coast, titusville, Oakhill area to get fish(mullet) but I was told of this site and I'm learning alot!
I've smoked fish off and on for about 23 years, and I've done some hams , turkeys, and sides as well.
I thank you for the reply and look foward to hearing from others as well,  One word though, I DONT KNOW SQUAT, so you folks are the teachers in my book, I'm a good student.

Bruce here is what I do for sausage & peppers. I grill the sausage on all sides high heat to give it color grill marks and some grill flavor. Then put it in a foil pan with some olive oil and smashed whole cloves of garlic put it in oven or hot smoker. In a seperate pan I put cut up peppers , sliced onions, olive oil , a little dried oregano Into a hot smoker or oven pull the sausage out when cooked just done and not dried out. Slice sausage into nice round chunks add to peppers and onions minus the garlic smashes ( sausage will have it's flavor) mix together. Now it can be frozen or put in the fridge overnight till rewarming and serving. I just served this at last weekends large cater it was a hit, made it the day before.

Glenn, go into Little River to the waterfront. Crab Catcher Restaurant is on the end next to the gambling boat. GREAT place to eat. The deck over the water is good if the bugs aren't biting. Lots of locals eat there.

We've been away to Penna and Ohio for the past 10 days eating and visiting.  Ended up being the cook for the wife's family reunion last Sat(7/11). Dogs, burgers, some brats, and chicken breasts boneless/skinless.
   I think the chicken needs some moisture when cooking them, but I don't like a basting brush since it pushes off the seasoning.  Was in a pinch cause I wanted to put a little oil while cookin them. So for a spur of the moment took a small bottle of cooking oil, and using an awl, poked about 8 - 10 holes in the top of the 12 oz bottle, then could just kinda squeeze the bottle and it would squirt out little streams onto the breasts.  Not a lot of oil butt enuf to keep em moist.  Anyhow, seemed to work well in a pinch.
