  Quick Apple Coffeecake 2 tablespoons sugar 2 cups biscuit mix 1 egg 3/4 cup milk 1-1/2 cups peeled and finely chopped apples 1/3 cup brown sugar, firmly packed 1/2 teaspoon cinnamon 1/3 cup biscuit mix 1/4-cup cold butter 1/2 cup peeled, chopped apples Combine sugar, biscuit mix, egg, milk and apples. Beat vigorously for 30 seconds. Spread batter in greased baking pan. Combine brown sugar, cinnamon and biscuit mix. Cut in butter until crumbly. Add apples. Sprinkle over batter.   QUEEN OF TARTS FRESH CITRUS CURD Makes 1 1/2 cups. 1/2 cup (125 mL) freshly squeezed lemon or lime juice, strained 4 egg yolks 1 whole egg 3/4 cup (75 mL) white sugar 1/4 lb (4 oz) unsalted butter, cubed Combine juice, eggs and sugar in a nonreactive pan. Slowly bring to a simmer Over medium heat for 8 to 10 minutes, stirring constantly. Mixture will Gradually thicken to a pudding-like consistency. When mixture coats back of Spoon, remove from heat and gradually add cubed butter, stirring constantly Until fully butter melts and is fully incorporated. Strain and refrigerate Immediately.
