is there a way with sitemap to tell googlebot that a particular file
on my website contains what is considered in the US as "adult"
material? (e.g. nudity, photo of a topless woman, etc).

i would like those files (and images) to be indexed, but i also want
google to know about their "adult" natures, so that they get filtered
properly with google "safesearch" filters.

is that possible with sitemap?

or are there some types of meta-tags that googlebot will recognize?

One way you can tell crawlers (and browsers) about adult content is to
use ICRA tags: http://www.fosi.org/icra/

i found no information from google indicating that they actually use
ICRA tags.

can you point me to a google page that indicates that googlebot
actually uses those flags?

It doesn't.

ICRA is an interface between the page's author and the user's web
browser - Google plays no part.
