I'm trying to optimize one site, and I would to now which percentage of keyword density can I use to not spam and for not be too poor, knowing that each page have a very big competition.
First you only concentrate on the matter only, ignoring the competitive part from the mind. Write the related content as a quality one for the subject and that should be a researched one. some data may do wonder. Once you are finished the write up (use some eye stoppers in the content at the upper part of the content), count on the keywords. If keywords come naturally with the content, do not do anything. Move on to the next step that is the Optimisation. I have got some amazing result with a financial website. Ask if any further assistance is needed.

The concept of an optimal keyword density is dead.
Keyword density is probably still one of the things that search engines look at, along with adjacency, relevancy, anchor text, tags... the list goes on and on and on.. One thing that appears certain though is that excessive keyword density is almost certainly one of those things that will raise red flags and may result in a penalty.
My advice? Write good, readable text.
Certainly, ensure your keywords are included on page. Sure, include them in H1..H5 tags where it seems logical - but don't write for density - write for humans or you'll more than likely find yourself in the doldrums.

Sekhar, thanks for your help. In my case it's a travel agency and I'm trying to get better rankings for search of hotels in cities, so, the only thing I can make is put a small text for each citie with the maximun possible variations depending of the citie, but I can't write a high cuality description of each citie because it can be all the cities of the world which have any hotel (not exactly but near). For that I need to know an acceptable percentage.

Good :) That means you have a city based travel agency. And I guess it serves on a locality based right? Do one thing. Try to provide some value based services like Google map for your city or locality. That will provide users to choose the related themes of travel from your site only. Also put a box for asking queries or guide at free of cost including mailing address. That might help to contact the visitors to serve them better.

yikes - that sounds like a 'thin affiliate' style site - you need to find a way to weave in more unique text, make it readable, tell a story. Sites with only pictures and short desriptions don't tend to do so well in search engines, unfortunately.
One strategy you can use is to build your site from the top down - concentrate on writing a few great pages that talk about specific things of interest to travellers - well written introductions - incorporating your keywords. These pages will tend to be picked up by the search engines quite well, and you can then target your promotional activities at those pages.
Those few well positioned pages then become the hubs from which you direct your visitors to all the great travel services you offer. Build several really strong pages instead of lots of really weak ones.
