I need to compile hundreds of gmail correspondences into one usable
document. Is there any easy way to do this? I'm willing to pay for
software help. There's just no way I can copy and paste all of it.

I'm afraid you'll have to print them one by one.

You can install a PDF printer which prints the emails into PDF files
(only the text, not the attachments) and print them out later. Or you
can just simply print them.
