Is there a way to track my extension uninstall/disable(lets say with google
analytics event)
I have't find a way to do it in the docs, maybe i'm missing something

I wish it was working but the extension is first disabled/uninstalled and
then the event is fired so you can't listen to you own
extension disable/uninstall
